Store-bought extracts can contain things like sugar, artificial flavorings, and other additives while our homemade extracts are made with just the base flavor ingredient and alcohol. Amelian Farm extracts are made with Madagascar and Tahitian vanilla beans, local roasted Costa Rican coffee beans, whole spices, and dried or fresh produce. You can smell the richness of the beans and intense concentrated spices. Make a coffee flavored coffee cake, bourbon pecan pie, allspice cream cheese icing on spice cake, or orange flavored whipped cream. Let your mind go with new flavor ideas!

These are some of the more available edible mushrooms in the East Texas area but by no means is this an all inclusive list. Mushrooms are a very seasonal and weather dependant treasure. I am always disappointed but never suprised when the temperature and humidity are just right, I hit a sure spot on just the right day after a rain only to find I'm three days late or there's not a mushroom in sight. Get them while the gettings good!

Are your products certified organic?

While our foraged ingredients are not certified organic, they grow naturally in the wild, free from synthetic pesticides and fertilizers. We prioritize sustainable harvesting practices to maintain the integrity of our products and the environment.

What is a good way to cook or prepare your dried mushrooms?

When using dried mushrooms in a soup or stew, they can simply be added at the time you add the water or broth. You may need to add more of the liquid to compensate for some lost due to their rehydration. To rehydrate dried mushrooms before adding them to the dish, place the dried mushrooms in a bowl and cover them with boiling water or broth. Let them soak until soft (5-30 minutes depending on the mushroom). Drain, reserving the soaking liquid. Gently rinse if desired. Use the rehydrated mushrooms as desired and the soaking liquid to add flavor to stews, stocks and sauces. It's also nice to add some flavoring to the liquid such as garlic, soy sauce, or Worcestershire sauce for additional flavor.

Can you share some cooking tips that highlight the unique flavors of your foraged ingredients?

The Amelian Farm Wild Mushroom Season Salt works best with hearty foods like steak or potato type dishes, it goes great with eggs, or even on popcorn. One customer claims it's like cheating with both hands in the kitchen. The Za'atar Seasoning works best with lighter foods like fish, chicken, and vegetables. I do a lot of experimenting with flavors and encourage everyone to taste, taste, taste at every stage of the cooking process. Not the raw chicken part though!!! Other seasonings, like our Filé powder and Epazote, are culturally specific but can also find other applications by the culinarily daring folks out there. By the way, Epazote smells like mint soaked in gasoline (not kidding) but it tastes great in refried and other Mexican style beans (maybe other ways too).

How should I store your foraged herbs and mushrooms to maintain their freshness?

Store dried herbs and mushrooms in airtight containers in a cool, dark place. Fresh mushrooms should be refrigerated with a cloth or paper towel under them for good airflow and used within a few days. Proper storage ensures you can enjoy the best flavor and quality from Amelian Farm.

Many of our products are seasonal; like herbs, berries for syrups, and especially mushrooms, or can take from a month to make for tinctures and some extracts. Vanilla extracts take several months from start to bottling to produce. All of that to say, since this is not our full time gigs, unfortunately, some things may not always be available.
