The eastern cauliflower mushroom (Sparassisspathulata) (center) is a unique, edible mushroom that looks like a clump of ruffled cauliflower or a sea sponge. It has a mild, savory flavor and texture, which is similar to egg noodles when cooked. This mushroom is excellent for foraging because of its distinct look. It grows in the summer and fall in eastern North America. The ringless honey mushroom (Desarmillaria caespitose) (top left), also edible, grows in tight clusters at the base and along the roots of eastern North American hardwood trees.
